ROOFTOP GLAM

WORDS: PHOTOGRAPHY

Looking for a new spot to admire the GC sunset with a few cocktails? Aviary Rooftop Bar is the new venue at Mantra at Sharks Hotel.

Perched atop the new Mantra Hotel at Sharks is an impressive rooftop bar. Aviary Rooftop Bar has found its own space away from the urban bustle of the city. Here you can take a seat and enjoy conversation as you look around at the sweeping skyline that stretches over Surfers and up over Mount Tamborine. Gather here with friends to take in the spectacular Gold Coast sunset – the shared-style menu will keep you satisfied. Aviary Rooftop Bar is the newest addition to the Mantra at Sharks hotel.

Choose from traditional Italian pizzas, with bases created from authentic flour sourced from a Venetian province, pork and veal meatballs or warm olives, for instance. These are the perfect accompaniment to acoustic Sunday afternoons. DJs will liven the crowd with funky house on Friday and
Saturdays inside. There are also plans for a cinema offering regular
art-house nights.

Chief executive Dean Bowtell tells ORM, “This is a unique offering for the northern Gold Coast that combines

breathtaking views and a premium beverage offering, including a broad selection of craft beer, complemented by traditional, Italian-influenced shared dishes. Guests of Aviary have the
option of an intimate, relaxed experience or, a late-night dance with friends. We’ve put a lot of effort into the music selection, including specially curated playlists, renowned DJs and original acoustic artists.”

Kookaburra harnesses soft notes
of juniper, raspberry and florals
complimented by blood orange agrum. Chairman’s Magpie describes itself as
a profound and balanced blend of spiced mahogany aromas finished off with crisp ginger ale. There are even healthier cocktail options, tap beers, locally grown brews, spirits, ciders and gingers, as well as an extensive range of wines by the glass or bottle.

With an impressive gin and whiskey library, the menu includes a guide to ‘ordering your gin’, either short or ‘Spanish-style’ with some background information about the gin and tonic pairing before you select from a range of over 20 varieties.

Back inside the Aviary, the aroma
of authentic Italian pizzas drifts from the wood-fired pizza oven. The menu ranges from simple Margherita (tomato, fresh mozzarella, basil) to vegetarian options such as White Hot (crème fraiche, roasted cauliflower, wild mushrooms, pecorino, mozzarella, pickled jalepeno) and Truffled Vegan (cauliflower, wild mushrooms, vegan mozzarella, truffle tapenade, arugula).

The light-filled, stylish new venue will capitalise on its location close to the rapidly expanding health and knowledge precinct, near the Gold Coast’s major public and private hospitals. Griffith University is also nearby at just an eight-minute walk away.

The Aviary interior has managed to bring the outdoors indoors with plenty of lush greenery. Daylight pours in through the large windows, streaming on to welcoming cream, fabric sofas. Bright blooms meet designer chic. Walk through to The Nest, an open-air space featuring a pop-up bar with outdoor heaters and plenty of group seating. This will be the perfect spot to enjoy Sunday sessions.

A range of bespoke cocktails have been especially created, and aptly named, for the Aviary. Choose from the Prosecco range which includes Aviary Spritz and Flowered Love Bird.

The complex includes a multi-purpose events centre, two restaurants, a café, bars and extensive fitness centre offering the latest gym equipment. This is one of the Gold Coast’s largest fitness facilities.
