The Star Gold Coast is set to open its new flagship Cantonese restaurant, Uncle Su, in early October.

Vibrant, fun, and embracing the spirit of family, Uncle Su will offer an impressive rendition of classic Cantonese cuisine, created with local Australian ingredients and a coastal sensibility.

Uncle Su will be located at the entryway to The Star’s impressive new tower opening later this year. The restaurant’s name is inspired by the respected term of Uncle in Chinese tradition; a name that perfectly represents the authentic Chinese family dining experience it seeks to create, with secret recipes and shared, signature dishes lovingly prepared.

Executive Chef Song Yao Su has perfected his craft over 35 years working in the world’s finest restaurants. He learnt skillful techniques from one of Hong Kong’s most revered and decorated chefs, Pui Wing Hui, cooking alongside the master for over a decade including an impressive tenure at Las Vegas’ invitation-only residences, The Mansions.

At Uncle Su, he will bring together these decades of experience with his own cultural heritage and family memories to curate a treasure trove of Cantonese dishes, infused with his signature Nouvelle style and new world flavours.

Live seafood will be the real star of the show; guests will be greeted by a spectacular display of fish tanks, filled with locally-sourced lobsters and crabs. Queensland groper, barramundi, abalone and coral trout will also be heroed throughout the menu, all sourced in accordance with The Star’s evolving sustainable seafood strategy, aiming to provide seasonal choices, a lessened environmental impact and support to local fisheries.

Chef Song said, “I’m thrilled to open the doors to Uncle Su and extend my dining table to friends, new and old. I feel so fortunate to cook in this beautiful part of the world, with access to some of the best seafood and produce the country has to offer”.

Diners can also look forward to Chef Song’s Peking duck, marinated in his own secret sauce for 24 hours before being roasted and cooked to perfection, that will be served and carved at the table. The restaurant will also feature a tantalising specialty Dim Sum menu, full of classic and loved dishes made to order – such as a char siu bao, a fluffy steamed bun bursting with delicious Chinese BBQ pork, or siu mai made with Australian pork and prawn meat and topped with Australian abalone.

Tea will be an integral part of the Uncle Su experience, with a tea connoisseur on hand to guide diners through the extensive menu and provide insight into the deep history, traditions and flavours of the tea.

Created by award-winning local architecture and interior design practice, Plus Architecture, Uncle Su takes its design cues from respected Chinese tradition, the Australian landscape and the quintessential energy of the Gold Coast. Think traditional Chinese design elements and bespoke handcrafted materials like oversized lanterns, a golden money tree and beautiful koi fish motifs, all bathed in a sea of red, gold, cool ocean blue and jade green. The result is a vibrant and energetic space that evokes a sense of happiness and prosperity to all who visit.

Uncle Su will be situated within the world-class entertainment and dining destination, The Star, located in the idyllic suburb of Broadbeach on the Gold Coast and just a 90-minute drive from the centre of Brisbane.
