Meet Stefano — the face behind Aviary’s delicious pizzas!

Perched atop the Mantra at Sharks hotel within the Southport Sharks facilities, is an impressive rooftop bar fittingly named, Aviary Rooftop Bar. Not only does it serve decadent cocktails, but it is known for its delicious pizzas; and the mastermind behind making the pizzas is Chef Stefano. Originally from the small town of Chieti, Italy, Stefano started from scratch working in a local restaurant making pizza from the age of 14. Not long after, he was in charge of the pizza bar.

Stefano tells ORM he loves a classic Margherita — the oldest and most authentic Italian pizza with the acidity of the tomatoes, sweetness of mozzarella, and fresh basil.

He also recommends the Burrata pizza to customers because of its authentic Southern Italian flavours. Try one for yourself at Aviary’s pizza bar and say ‘hi’ to Stefano while you’re there!
