ROASTED BONE MARROW WITH SOURDOUGH AND GREEN SALAD

SERVES 4

 

Bone marrow has got to be one of my favourite foods ever. Not only is it incredibly tasty, but it's also one of the most restorative and nourishing foods you can eat. I’d always thought it was the stu of restaurants and chefs, but it’s actually super easy and one of the cheapest meals you can make. If you’re entertaining, it makes a great starter and is a definite crowd pleaser. Bone marrow is best served simply with toasted sourdough or focaccia and a small side salad.

 

2 tablespoons olive oil

2 garlic cloves, crushed

1 tablespoon finely chopped

flat-leaf parsley leaves

4 beef marrow bones, cut in half

lengthways (get your butcher

to do this)

1 tablespoon lemon zest

sea salt and freshly ground

black pepper

4 slices of sourdough, toasted

 

Green salad

large handful of mixed

salad leaves

1⁄2 cup flat-leaf parsley leaves,

roughly chopped

1 tablespoon capers, drained

and rinsed

1 spring onion, sliced

2 tablespoons olive oil

1 tablespoon lemon juice

sea salt and freshly ground

black pepper

 

Preheat the oven to 220°C and line a baking tray with baking paper.

 

Mix together the olive oil, garlic and parsley in a small bowl.

 

Arrange the bones on the prepared tray and brush the marrow generously

with the olive oil mixture. Sprinkle over the lemon zest and season with salt

and pepper. Place in the oven and roast for about 20 minutes or until the

marrow is gooey but not melted.

 

Meanwhile, to make the salad, combine the salad leaves, parsley, capers

and spring onion in a bowl and dress with the olive oil, lemon juice and saltand pepper, to taste.

 

To serve, use a knife to scoop out the marrow and spread it over the crusty

sourdough. Pour any baking tray juices over the top, and place a portion of

salad on the side. Use your bread to soak up every last morsel and enjoy!
