12 x Shucked oysters
24 fine slices of pickled ginger (approx. 2 mm)
1 finger lime pulp, seeds removed
200ml Yuzu dressing
1 tsp Dijon mustard
120ml Yuzu juice (buy at Asian supermarket) or substitute with lime juice
80 ml Brookfarm Macadamia oil
Combine in a bowl with whisk and immediately spoon onto freshly shucked oyster. Top with finger lime and pickled ginger. Serve oysters over ice.
