Palette Restaurant adds an artful twist to fine dining

Casual fine dining is now on the menu for your next Gold Coast adventure.

Palette Restaurant has graced the ground floor of HOTA Gallery, the largest public gallery outside of a capital city, for less than a year and has already built a reputation for providing diners with otherworldly, boundary-pushing experiences. Palette is one of only four restaurants on the Gold Coast to have been awarded Two Hats by The Australian Good Food Guide.

A showstopping location is only one of the factors setting Palette apart from all others. Led by Executive Chef Dayan Hartill-Law, his expertise is priceless. A career built over years working alongside the best chefs in the world, including Peter Gilmore (Quay) and Heston Blumenthal (Dinner by Heston) his approach to food is unmatched. From running The Press Club in Melbourne and Vanitas at Palazzo Versace, Dayan has built a reputation as an innovative chef, changing the way we see fine dining.

Building a menu that celebrates and embraces local produce, whilst still being on the cutting-edge of the culinary world has been a major part of Palette’s early success with diners. Using the artworks on the walls of HOTA Gallery’s major exhibitions, visitors have come to expect a rotating menu of artistically inspired dishes to enhance an already lux experience.

With the recent addition of a Sunday High Tea, Palette has five menus to choose from, allowing diners to curate the ultimate spread. Leaning heavily on the very best of Australian seafood to create a wonderous combination of Mooloolaba tuna, Murray cod, and Hervey Bay scallops, to the three cheese toastie of your dreams, a very Gold Coast approach to fine dining is finally here.
