Dragonfruit & Pistachio Dessert Terrine INGREDIENTS

1 can condensed milk

1 can evaporated milk

4 oz cream cheese (softened)

Juice of 3 limes

1½ cups red, pink or purple pitaya/dragonfruit

½ cup pistachios (no shell)
METHOD
Blend milks and cream cheese until smooth. Pour into a loaf tin that has been lined with plastic food wrap. In a clean blender and bowl, puree the pitaya and lime juice together. Pour slowly into milk mix in a fine stream, distributing evenly as you go. Add pistachios at this stage, and using a knife, gently create swirling patterns of colour throughout the milk mixture. Freeze for 24 hours. Turn out onto serving platter. Present with extra fresh fruit and nuts, and cut into inch thick slices to serve.
