Bangalay Luxury Villas is a boutique South Coast resort set on the pristine Seven Mile Beach of the Shoalhaven Region, complete with an intimate yet superb on-site restaurant, Bangalay Dining. Each of the 16 private Villas feature golf course or garden views as well as a fireplace, in-villa kitchen and a sun filled north facing deck.

The villas, designed by Owner and General Manager, Michelle Bishop, have been designed with comfort and in a contemporary style. Conveniently located close-by to the attractions of the Shoalhaven and South Coast, Bangalay is only a short, scenic drive to the boutique towns of Berry, Kangaroo Valley, Kiama, Gerroa, Gerringong or further south to the white sand beaches of Hyams Beach and Jervis Bay.

RONNIE GORMAN – BANGALAY DINING

Ronnie Gorman is without doubt one of the most qualified and respected restaurant managers in Australia. Starting his career as a Chef and thus understanding the full operations of a venue – back to front – he realized early on his true passion, strength and finely honed skill, was engagement with guests and making their experience the best it can be! And of course, Ronnie’s front of house career started at one of the world’s best – Nobu, Berkeley Street in London.

A Michelin-star restaurant at the time, it set him on an exciting path for a major career in the premium dining space and he hasn’t looked back. Returning to Australia, Ronnie spent four years at the two-hatted Wasabi Restaurant in Noosa, during which time he was a finalist in the Young Waiter category of the Appetite for Excellence Awards. Moving his eyes and palate to Sydney, Ronnie took up the role of General Manager at Mejico Restaurant and Bar in Sydney’s CBD giving him the responsibility for opening a new restaurant, onboarding the front and back of house and kitchen teams and importantly full-service training.

In 2018, Ronnie took up the role as Restaurant Manager at the much-lauded Saint Peter in Paddington. It was here Ronnie relished the opportunity to be an integral part of food and service delivery in a tight and extremely popular and celebrated venue. Ronnie was also the curator and manager of the respected wine list and managed the wine and food pairings to great affect.

The awards followed, and in 2019 Saint Peter won Australia’s Wine List of the Year Awards. During his tenure, Saint Peter also took out first place in Delicious Magazine’s Top 100 List and their People’s Choice Award.

Ronnie’s move to Bangalay Dining was driven by the holistic experience offered at Bangalay Luxury Villas. He was immediately attracted to the sophisticated food and beverage offering but also the standard of the accommodation complementing the native coastal environment heightened throughout the boutique resort to create the perfect seaside escape.

Ronnie will be drawing on his valued and long-lasting relationships with many of Australia’s most renowned wine makers and distillers to further develop the wine experience at Bangalay Luxury Villas closely working with GM/owner, Michelle Bishop, and Bangalay’s new Executive Chef team, ex-Caveau owners Simon Evans and Thomas Chiumento, to create one of Australia’s must-visit coastal dining experiences.
